RECIPE FOR OATMEAL CAKE
Title: Oatmeal Cake
Category: Layer Cake

Instructions:

Oatmeal Cake

1 1/4 cups boiling water
1 cup raw oatmeal
1/2 cup (1 stick) butter or margarine
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon

Mix together water, oatmeal and butter or margarine in a bowl and let stand for 20 minutes. Add remaining ingredients and bake at 350 degrees F for about 35 minutes in a 13 x 9-inch pan.

Frosting
3/4 cup granulated sugar
1/4 cup cream or milk
1/2 teaspoon vanilla extract
1/2 cup (1 stick) butter or margarine
1 cup pecans, chopped
1 cup coconut

Mix ingredients together and bring to a boil. Spread over cake while still warm. Put under broiler for a few minutes.
