We all love caramelized fruits, and now, because we are in the middle of the summer, we must try some caramelized peaches, with a touch of fresh ginger and a cold homemade yoghurt ice cream.

For a delicious homemade ice cream, mix the yoghurt (use greek youghurt, is great for this recipe) with the caster sugar and lay it in flat casserole. Put it in fridge for 3 -4 hours. If you don’t have time, you can buy yoghurt or vanilla ice cream.
I used caramelized peaches this time, but you can caramelize pineapple with some cinnamon or apricots. Burn the sugar, add the butter and stir well. Sprinkle the ginger, add the peaches (slices) and caramelize them.
