Coffee Cream Sponge Cake Recipe
Dear Coffee, I love you!!! And I love everything with coffee. This coffee cream sponge cake recipe is one of my favourites.Is a simple recipe, with sponge cake, nuts and cream coffee.
Today, the clasic sponge cake, is a star. One with big choped nuts and a delicious coffee cream.

For the nuts sponge cake dough, chop the nuts, lay them in a 20 x 30 pan, add the butter and bake for 10 min, until they have a nice golden colour.
Beat the egg whites.
In another bowl, mix the yolks with sugar, instant coffee, and 8 tbs of water. Add the flour mixed with the baking soda, then the beaten egg whites. Lay the dough over the nuts and bake for 30 min. When the nuts sponge cake is baked, let it cold, and turn it up side down. You’ll have a nice crunchy top for the sponge cake.
For the coffee cream mix the yolks with the sugar and the instant coffee. While stirring constantly, bring to a boil on bain marie until you have a thick coffee cream. When the coffee cream is cold, mix it with the butter and cover with it the nuts sponge cake.
