Light Orange & Mascarpone Cake
My mother loved this orange & mascarpone cake from the first bite. She’s not a chocolate lover, so this cake is perfect for her. With a soft mascarpone and grated orange peel filling, a little bit of caster sugar and vanilla flavour, this recipe is in her top 5 spring holiday cakes.
For the filling try to use a high quality mascarpone and homemade cream. You can cover the cake wIth a white chocolate glaze or with whipped cream. Top it with with orange peel, slices.
It’s a striped cake, with a classic cocoa sponge dough.
For the cocoa layer beat the eggs, then add carefuly the flour (bit by bit) and the cocoa powder. Add the sugar and mix well. Lay the dough on a baking sheet and bake for 20 minutes. The secret for a fluffy dough is to use a hand beater not a electric one.
For the soft and creamy filling mix the mascarpone with 200 g whipping cream, then grate the peel from a big orange and add it to the mixture (you’ll have a great natural aroma for the mascarpone). Add the caster sugar and put the cream on fridge for 30 minutes.
This light orange & mascarpone cake is a striped cake. It’s easy to make a striped cake, don’t worry. Cut the cocoa dough in 3 bands, then spread the orange & mascarpone fiiling over it. Carefuly roll over the dough, then set it verticaly. When you’ll cut the orange & mascarpone cake, you’ll have a striped one.
