Peaches Cheesecake Recipe
My peaches cheesecake recipe is the best 🙂 ! The perfect no bake dessert, this peaches cheesecake it’s easy to do, almost like the Strawberries Cheese Trifle. It’s the same layer with smashed biscuits, but with a better cream :p, with fresh peaches inside, and, of course, topped with a lot of fresh peaches slices ( in the end, it will looks like a sunny summer day).
Like I sad, the peaches cheesecake is a no bake recipe, so we make a “doug” from smashed biscuits; you can use vanilla flavoured or digestive biscuits. Mix them with some butter (at room temperature) and brown sugar (if you use caster sugar, your mixture will have a better texture). Lay the biscuits dough in a cake tin and put it on fridge for 30 minutes.
I promised a better cream, so let’s start with the cheese: I used fresh ricotta cheese (you can also use mascarpone ) mixed with caster sugar and whipped cream. Next step, the fresh peaches cutted in small pieces, mixed with the cheese cream.
Lay the peaches cheese cream over the smashed biscuits “dough”. Cut 2 peaches in thiny slices and cover cheese cream with them. If you can hold on, put the peaches cheesecake on the fridge for 30 min, then serve it.
