Ricotta Cheese & Coconut Truffles Recipe
Coconut is in my top 5. Light but exotic, versatile, delicious and healthy. You can use it almost for everything; coconut cream for cakes, coconut oil for sweets and salads, shreded coconut for truffles, coconut ice cream.
Because I like easy recipes, and I love the coconut, I made this ricotta cheese & coconut truffles. I’m not sure, but this can be the perfec dessert recipe: delicious, healtyh, quick and easy to do. Yes, it’s the easiest dessert recipe. All you have to do is to mix some fresh ricotta cheese with coconut, sugar and banana. This ricotta cheese & coconut truffles can be a sweet & healthy gift for your friends or your love. Make little balls from the mixture, sprinkle with shreded coconut and set them in pretty truffles paper cups.

In a bowl mix the ricotta cheese with 120 g of shrended coconut, and sugar. I love almonds so I added 1 tbs of homemade almonds syrup and a big smashed banana. Make little balls from the ricotta mixture, and set them in the fridge at least 1 hour. Sprinkle with shreded coconut or chocolate chips. If you are a chocolate lover, melt 100 g of dark chocolate, mix it with 3 tbs of milk and cover the ricotta cheese & coconut truffles with it.
