Healthy Stuffed Potatoes Recipe

Here is a quick and easy dinner recipe.  For these healthy stuffed potatoes recipe, all you need are some potatoes, sweet corn, cheese and fennel. And 20 minutes.


  • 8 big potatoes
  • 200 g sweet corn
  • 150 g hard cheese
  • 4 spring onions thinly sliced
  • fennel
  • salt & white pepper


Step 01

Boil potatoes with jacket, then peel them. Cut potatoes in half and with a teaspoon scoop out pulp, leaving a thin shell. In a bowl mix the pulp with the sweet corn, hard cheese, thinly sliced spring onion, fennel, salt and white pepper. Spoon into potatoes shell, then top each potato with thinly sliced sprong onion and bake for 20 min.
