Sweet Corn Pineapple Salad
I love spring. Coloured flowers, fresh green grass, blossom trees, little bugs; a new life, fresh one.
I love to go to the market, every saturday morning. I’m in love with the fresh spring vegetables & herbs: spring onions, leek, turnip, letucce, dill & persil. I buy everything, I can help it when i find a fresh organic vegetable.
I like to mix up fresh the fresh vegetables and to find new healthy salad ideas. For today, I started with the spring onion. I want a light salad, so I’ll use some fresh pineapple and sweet corn (2 sweet ingredients that will be great with fresh spring onion ) for a basic layer salad. For the next layer, I use feta cheese (a delicious greec speciality) and greec youghurt .
If you want some carbs, top this sweet corn pineapple salad with 2 hard boiled eggs and homemade mayonaise. And some bacon. And your light salad is gone :))))

These is the easiest salad to do. For these Sweet Corn Pineapple Salad all you need to do is to spread the ingredients on layers. Begin with the mushrooms layer. Add the sweet corn layer, then the spring onions sliced. Now you have a nice colourful salad. Continue with the pineapple layer, then add the feta cheese.
Like I said, you can top the sweetcorn pineapple corn salad with homemade mayonaise, bacon and eggs. Boil 2 eggs for 10 min, chop them and spread them over the mayonaise layer.
