We are lucky, we have a rich summer, with a lot of vegatables and fruits, so let’s use all of them for healthy and delicious dinners. For today I propose a zucchini & mushrooms casserole. This vegetables casserole can be your healthy dinner when you don’t have time to cook. In just 30 min you’ll have a hot no meat dinner or you can serve the zucchini and mushrooms casserole cold, as a snack or appetizer.

We have a lot of fresh vegetables so let’s use them in a delicious way. Cut the fresh zucchini in small wedges, the carrots, mushrooms and the leek; mix them with salt and pepper to taste. Put the vegetables mix in a large pot with oil, and saute them for 10 min. Sprinkle with fresh dill.
Step 02
Beat the eggs and mix them with the hard cheese. Top the zucchini & mushrooms casserole with this mix; cut slices 2 big tomatoes and lay them over the zuccinni casserole and bake for 20 min. You can serve it hot, for dinner, with fresh tomatoes or cold like a appertizer to a party.
