Gratineted Zucchini Casserole Recipe
One of my favourite combinations is that summerish tomatoes, mozzarella and fresh basil mix. Is simple, healthy and easy to do. And I can use this mix for a lot of others summer recipes. For today, I have good news for zucchini lovers: a gratineted zucchini casserole recipe. A quick layerd casserole, made from zucchinni slices, tomatoes, mozzarella and, of course, fresh basil.
For a nice crispy surface, you can top the zucchinni casserole with a mix made from eggs and sour cream.
100 ml sour cream
250 g mozzarella
2 small zucchini
salt & pepper

Wash well the vegetables. Slice the zucchini, tomatoes and the mozzarella.
Grase with oil a ovenproof dish and lay the zucchini slices, tomatoes and mozzarela. Add salt and pepper to taste, fresh basil and bake for 20 min.
For a nice gratineted zucchini casserole, top the layers with beaten eggs mixed with sour cream. Bake again untill a nice crispy surface forms.
